Summery Strawberry Recipes

A summery twist on a classic treat. A great place to start for beginners or families looking to make some memories in the kitchen. 

            Ingredients:

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 12 tablespoons unsalted butter (softened)
  • 1/2 cup granulated sugar (packed)
  • 3/4 cup brown sugar (packed)
  • 1 tablespoon vanilla extract
  • 2 large eggs
  • 1/2 cup fresh strawberries (chopped)
  • 1 cup chocolate chips
  • additional chocolate chips (for topping)

    Instructions:

  • Preheat oven to 370F degrees 
  • Line 2 baking sheets with parchment paper
  • Whisk together flour, baking soda, and salt in a bowl & set aside
  • Cream together butter, sugar, brown sugar, and vanilla in a large bowl (use an electric or stand mixer)
  • Add eggs one at a time, mixing between each egg
  • Add flour mixture and mix until just combined (don't overmix)
  • Using a spatula, stir in fresh strawberries & chocolate chips until combined 
  • Scoop dough into balls about 2 tablespoons each & place onto a prepared baking sheet
  • Bake for 10 minutes, rotate baking sheet clockwise and bake for an additional 4-5 minutes until golden brown on the edges
  • Immediately after taking cookies out of the oven, place additional chocolate chips on the top and let cool for 5 minutes. Move to wire cooling rack.

            Ingredients:

  • 4 1/2 cups fresh, washed strawberries (patted dry)
  • 1/2 cup granulated sugar 
  • 2 tablespoons lemon juice

            Instructions: 

  • Puree strawberries in a food processor 
  • Run through a fine sieve to remove seeds (optional)
  • Pour the strawberry puree in a large non-stick saucepan and cook on medium-high heat
  • Add sugar and lemon juice and mix until combined 
  • Stir frequently until jam thickens and bubbles are covering the surface (about 12 minutes) 
  • Pour jam into a clean jar and let it cool completely 
  • Seal the jar & refrigerate up to 10 days

  • 2 cups strawberries 
  • small box of jello (dry) 
  • 18.25oz boxed cake mix
  • 1 cup mini marshmallows (optional)

            Instructions: 

  • Fill the bottom of a 9x13 pan with strawberries, then sprinkle the jello (dry) over top
  • Cover with mini marshmallows (optional)
  • Mix a boxed cake mix according to instructions & pour over the strawberries
  • Bake at 350F degrees for 30-35 minutes, test with a toothpick 
  • Serve warm with ice cream or whipped cream
